Chicken Olive Sandwich


I just felt awful about Monday's This Weeks Cravings post for sandwiches - so I worked up this tasty number!

Quick, easy to toss together and just darn tasty too!



Chicken Olive Sandwich

  • 1 cup shredded chicken (use those leftovers!)
  • 1/4 cup mayo
  • 1/2 cup shredded cheese
  • 1/4 cup chopped green olives (more or less depending on personal taste)
  • Pepper to taste
  1. Combine ingredients.
  2. Slice 2 large rolls in half. Spread 1/2 chicken mixture on one side of each. Place topped half under broiler for 2-3 minutes until cheese is melted and everything is fantastically gooey.
  3. Add thin tomato slices, stack, and enjoy!
Note: I used pimento stuff olives, yum!
