This Week's Cravings: Apples

Did you know, that apparently, today is Johnny Appleseed's birthday?

So of course, we should feature some incredibly tasty apple recipes today right? Well we thought so too! I love early fall and it's abundance of apples, yum!

I'm sharing an apple pie recipe today - perhaps you feel this isn't too original. Perhaps. But this is a recipe from my 4-H days and fond to me. Plus it's tasty.

Perfect Apple Pie

2 (9") pie crusts (or the recipe that follows)
5-6 cups thinly sliced, peeled apples
3/4 cup sugar
2 T flour
3/4 tsp cinnamon
1/4 tsp salt
1/8 tsp nutmeg
1 T lemon juice

  1. Heat over to 425 degrees.
  2. In a large bowl, combine apples, sugar, flour, cinnamon, salt, nutmeg and lemon juice. Mix lightly.
  3. Spoon into crust lined pan. Top with remaining crust. Fold edge of top crust under bottom crust - press together to seals. Have fun making the edges pretty (my tutorial) - maybe even use a cookie cutter to make a pretty steam vent in the top...
  4. Bake 40-50 minutes until crust is golden brown and juices are bubbling out. By the way... you should probably put a cookie sheet on the rack below your pie to catch those delicious bubbling juices.
  5. Once baked, place on a cooling rack for at least 20 minutes. This helps the juice redistribute and will make for prettier slices.

Serve with ice cream.

Of course.

Pie Crust
3 cups flour
1 tsp salt
1 1/4 cup shortening
1 egg
6-7 Tb cold water
1 tsp vinegar

Blend flour, salt and shortening with a fork or pastry blender until crumbly.
Mix egg, water and vinegar in a small bowl, then work into the flour mixture with your hands until a ball begin to form.
Shape into a ball, then cut in half.
You now have dough for your top and bottom crust.
