This Week's Cravings: Summer Veggies

The theme this week is Summer Veggies - during the summer months I love vegetables fresh from the garden or farmers market. Tomatoes, cucumbers, zucchini, yellow squash; such a bounty of wonderful flavors!

This summer has had some slim picking though due to extreme drought across much of the U.S. Farmers markets are low, produce in grocery stores are poor quality and even our local pick-your-own farms are closed. {We also had detrimental ice storms last winter.} So, today I'm sharing a tasty archived veggie recipe you can adapt no matter the produce you have on hand - Ratatouille!

Ratatouille is easy and tastes good; could you ask for more? Change it up a bit, and cook the vegetables on the grill, yum!

•1/4 cup olive oil

•1 1/2 cups small diced onion

•1 tsp minced garlic

•2 cups medium diced eggplant, skin on

•1/2 tsp fresh thyme leaves (I used about 1- 1 1/2 tsp dried)

•1 cup diced green bell peppers

•1 cups diced red bell peppers

•1 cup diced zucchini squash

•1 cup diced yellow squash

•1 1/2 cups peeled, seeded and chopped tomatoes

•1 Tb thinly sliced fresh basil leaves (Again, I used dried, about 2 tsp.)

•1 Tb chopped fresh parsley (yep.. dried, 1 Tb)

•Freshly ground black pepper
