It is what's for dinner after all. BEEF!
Talk about some crazy times in the Q household! We are still in the midst of moving chaos. My computer crashed, and that has been a weird experience. I have some serious apology emails to write.... and alas -- no cooking or experimenting for a couple weeks now. I'd planned ahead a little, but fully intended to be in a functioning kitchen by this point. {sigh}
So I was hanging my head in shame this morning when I realized there was no Beef post in my future. Till I searched my back-up, emergency, recipe file and found THIS! It was very yummy and super easy. Enjoy :)
This Week's Cravings: BEEF

Philly Beef Enchiladas
- 1 lb ground beef
- 1 can Rotel, or diced tomatoes with peppers
- 1 carton, Philadelphia Cooking Creme: Sante Fe Blend
- 2 cups shredded cheese, your choice.
- 8-10 flour tortillas
- In a large skillet, brown beef. Use you spoon to break meat into small pieces as it cooks.
- Drain any excess grease, then return beef to skillet.
- Drain liquid from the Rotel, add to beef. Next add the Philly creme -
I used approx. 1/2 the container. {sorry for the fuzzy picture} It is surprisingly warm in flavor, so start small. Lastly, mix in 1 cup shredded cheese. 
- Scoop 1/4-1/3 cup filling in the middle of a tortilla - roll up and place in a lightly greased casserole dish. Continue with remaining filling and tortillas.
- Sprinkle with remaining cheese. Bake at 350 degrees for 15-25 minutes, until hot throughout and cheese is melted.
Enjoy! This is very easy to prepare in advance, as it refrigerates or freezes well. Another idea? Serve the warm and creamy filling with some chips for an outstanding dip!

We don't eat a lot of beef, but when we do - goulash is always at the top of the list. I'm looking forward to browsing the recipes today.
