This Week's Cravings: Incredible Eggs!

You know the jingle! It's incredible.... it's edible.... it's an egg....

The theme today is Eggs - boiled, scrambled, fried, quiches, link up your egg recipes!

Today, I'm sharing another tweaked recipe from Buns in my Oven. While reading her blog (read the entire thing) I discovered Deviled Egg Dip and thought, "How genius!" "Brilliant" "Perfect revision of a classic!" And all this considering my lifelong troublesome relationship with eggs...

I didn't follow her recipe exactly - I basically made deviled eggs how we like them, and recommend you do the same. {Update: Hubby added freshly chopped tomato and some bleu cheese - extra yummy! Personally, I think it now needs some crumbled bacon!}

Deviled Egg Dip

  • 5 boiled eggs, shells removed

  • 1/4 cup mayo

  • 2 Tb spicy mustard

  • salt and pepper

  • 1/2 tsp paprika

  • 1 celery stalk, finely sliced

  1. I used my handy-dandy slicer to chop the eggs. If you place the egg in one direction, say pointing north and south, and slice... then carefully turn the whole egg pointing east and west and slice... you will get perfect egg 'strips.' {Note: I didn't use two yolks.}

  2. Carefully mix in mayo, mustard and celery. Sprinkle in paprika, then salt and pepper to taste.

  3. Chill until ready to serve.

There you have it! Very easy and really tasty - perfect for picnics, cookouts, even sandwiches!

{Notes: I didn't discuss boiling the eggs; I think everyone has their own technique for this step. Other seasoning options: Italian seasonings, a little spicy, or maybe Buffalo Style with a couple dashes hot sauce!}

Nathan is a deviled egg fanatic! :-) I might have to try this over Easter. It actually reminds me of egg salad!
