It's This Week Cravings: Sweets for your Sweet!

This week I'm sharing a recipe my hubby makes - he loves being in the kitchen as much as I, and loves to experiment. He also loves popcorn balls & had a lot of fun working with this recipe. He dug out my heart pans, sprinkles, played with the presentation and took all the photos!

Caramel Popcorn Balls

  • 6 cups popped popcorn

  • 3/4 cup firmly packed brown sugar

  • 2 tb water

  • 2 tb corn syrup

  • 1/2 cup margarine or butter

  • 1/4 tsp baking soda

  • 1/8 tsp salt

  1. Spread popcorn onto a large baking sheet, or pour into a large bowl. Set aside.

  2. Prepare pans with non-stick butter spray. Generously add sprinkles to bottom of pan. He used a heart pan - but any shape should be fine, such as muffin tins. Set aside.

  3. Combine baking soda and salt in a small bowl and set aside. This recipe moves quickly, so you want to have everything measured and ready to go.

  4. In a large saucepan, combine brown sugar, water and corn syrup. Cook, stirring occasionally, until candy thermometer reaches soft crack stage - 280 degrees. Stir in margarine and cook to 280 degrees again.

  5. Quickly- but carefully!- remove from heat; stir in baking soda and salt.

  6. Pour caramel over popcorn and toss to coat - move quickly because it will set quickly.

  7. As soon as popcorn is coated, but caramel is still soft, spoon into mold. Use a cup to help 'squish' into the shape.

Let cool, then pop out of mold!
