This Week's Cravings: Cherries!

Happy President's Day - some of you may be home chillaxin' today and to you---Enjoy! Those of us at work; well it's Monday and I have no real comfort to offer you. Other than some sweet desserts and treats :)

Today at This Week's Cravings we are acknowledging President's Day and Founding Father George Washington's birthday with a cherry theme - so please share, read and comment!

Cherries rarely find their way into my home. We like them - especially fresh cherries, yum! - but usually they scoot down the list to make way for chocolate items. So this weeks theme was a bit of a challenge. I searched online, browsed my cookbooks, brainstormed with my 'creative team' and made a list of ideas. Some of which will eventually find their way onto the blog - but today's recipe was completely random.

Hubs found these 'cherries' at the grocery store and we were excited to try them. We are really happy with the results and hope you will be too!

Cherry Chocolate Chip Cookies

  • 3/4 cup packed brown sugar

  • 1/2 cup sugar

  • 1/2 cup margarine, softened

  • 1/2 cup shortening

  • 1 1/2 tsp vanilla

  • 1 egg

  • 1 3/4 cup flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup semi-sweet chocolate chips

  • 2/3 cup cherry chips

  1. In a large bowl mix butter, shortening, brown sugar and sugar until creamy.

  2. Mix in egg and vanilla.

  3. Next, add flour, baking soda and salt. Mix by hand because it will get thick!

  4. Stir in the chips - make sure to eat a few. It's a must to sneak chips along the way!

  5. Spoon dough - approx 2-3 Tb each - onto a lightly greased baking pan.

  6. Bake at 350 degrees for 7-8 minutes - depending on how you like your cookies. I like mine with lightly browned edges and really soft centers - that's 6-7 minutes. Hubs like them darker and crunchy - 8 minutes.

These are a great change - a spring-like twist to a classic cookie!

I've never had cherry chips before - I'll have to try and find some to take back to the UK with me (I'm visiting California at the moment). Your cookies sound so good!
