Crockpot Lettuce Wraps

I love ordering Chicken Lettuce Wraps - they are usually found on the appetizer menu, but if a restaurant offers them... chances are I will order them. So I was incredibly excited to find a crockpot recipe for Lettuce Wraps on the wonderful blog A Year of CrockPotting. Not only is it super easy - and super tasty I might add - but fairly good for you. Which is fabulous with my new Shrinking Jeans challenge and weight loss initiative.

Crockpot Lettuce Wraps

  • 1 lb ground chicken or turkey, thawed
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/4 cup soy sauce (I used light; low sodium would have been even better!)
  • 1/4 cup water
  • 1 Tb rice wine vinegar
  • Pinch of all spice (or a little cloves, cinnamon and black pepper)
  • 2 Tb balsamic vinegar
  • 8 oz. water chestnuts, roughly chopped
  • Large lettuce leaves, separated and rinsed.
  1. Spread ground meat over the bottom of the crockpot. Top with chopped onions and garlic.

  2. In a small bowl combine spices, vinegars and soy sauce and pour into crockpot. {The original recipe called for white wine, no water. I, unfortunately, did not have any white wine so I just sub'd the water and added a little rice wine vinegar. } I then poured the water in the same bowl and kinda swirled it around to get the extra spices that clung to the edge of the bowl. Pour into crockpot.

  3. Cook on high for 3 1/2-4 hours. Break meat into small chunks and stir well. Add water chestnuts and cook for another 30 minutes to an hour.

  4. Serve warm over lettuce leaves. I drizzled with a little Garlic Teriyaki Sauce I have in the fridge. Roll up like the egg rolls - I find that works best, but it will still be a messy eat!

I made the filling Sunday and have packed it for my lunch this week. It is perfect - nice and light, but filling to help get them through the work day!

These are one of my favorite things to order at PF Changs. Most recipes call for chopping up the chicken really fine. Using ground chicken instead is such a great idea. What a timesaver!

This sounds delicious, not to mention really unique. Thanks for sharing :) We have lots of home-grown lettuce in the garden this year, and I think this would be a fun way to use some of it.

This was my first time using balsamic vinegar. I was surprised at the flavor. It's almost like Asian cuisine, but it's not quite. My husband loved using the lettuce instead of the carby tortilla! Thank you for sharing the recipe.
